Established in 2017, the Wolichu Wachu washing station is different from other stations we’ve bought from in the past. Because it was built so recently, it takes advantage of newer approaches to maximizing efficiency and quality. Cherries that are brought to the station for washing are first sorted for ripeness then put into water to sort again, this time for floaters that indicate undeveloped seeds within the cherry . The depulper separates these out to a different tank. The coffee moves through the various stages using gravity, which reduces the need for more water and pumps. This is in line with many modern coffee mills that are being built around the world.

Perhaps most interesting is that the vast majority of the coffee being brought in by the neighbouring 4500 coffee farmers is Bourbon, a variety brought out of Ethiopia many centuries ago before being planted around the world. Typica also makes up a small amount of the mix as well.
