After returning to Costa Rica from the United States, Mauricio Jimenez, purchased a coffee farm in 2013. Mauricio now operates 2 farms, San Martin and El Llano with the help of his wife and 3 children. Not being born into a coffee producing family has not deterred Mauricio, he is very passionate and hopes that his children will one day take over operations. It is also his hope to build a wet mill on his property within the next 3 years.
After harvest, ripe cherries are delivered to a neighbouring mill for wet processing. Cherries are sorted using the flotation method, where underripe cherries can be skimmed off prior to processing. The cherries then pass through a mill to remove the skin and pulp before undergoing washing to remove all of mucilage from the seed. The coffee is then transported back to Mauricio's farm for drying. Mauricio uses raised African-style beds to dry the coffee in the sun for a period of 6-8 days.
