When Francisco Mena bought his coffee farm, he uprooted almost every coffee tree that had been growing there. Almost. The farm’s previous owner had planted a small section of highly unusual H3 coffee trees. H3 is a pretty new variety that is classified as an F1 hybrid, which means that it is a first-generation cross between two other varieties. F1s are proper varieties, but they don’t produce predictable offspring. The H3 variety comes from caturra and and an Ethiopian landrace accession known as E531, which is cataloged at the Tropical Agriculture Research and Higher Education Center in Turrialba, Costa Rica. The result? A coffee with the floral intensity of an Ethiopian coffee and the deep sweetness of caturra.
This lot of coffee comes from Monte Lourdes and is 100% Caturra, which has been processed as a red honey. This means that the coffee cherries are depulped and the seeds are left to dry with some of the sticky mucilage left, which causes them to turn red in the sun.
