When we pulled up to what I thought was Ilde’s farm,I was confused. There wasn’t any coffee around us, and it didn’t feel like we had gone very high up the mountain yet. My confusion slowly left as we began hiking up along a muddy outcropping next to a small waterfall. As we spent the next 45 minutes trudging up steep muddy slopes, I wondered how farmers were able to get their coffee down from the farms at all. Ilde’s tract of land strides along the top of a small hilltop in the mountains above Pitalito, Huila. As he took us through his farm, he explained his approach to fertilization and pruning, he showed us his new caturra plantation, and fed us coffee cherries off of the tree. These were some of the sweetest coffee cherries I’d ever tasted and it was a true testament to how well Ilde took care of his coffee. Ilde depulps his own coffee in a covered area just above his house, and has two tanks for fermenting his freshly depulped seeds. As is pretty common in Huila, he has built a covered patio for drying his coffee next to his home.
