Finca Aguas Altas is located near Guatemala’s border with Mexico’s Chiapas region. Gabino and Gilberto Mendez purchased this farm in 1989, using the money they had saved during their careers as school teachers. They split the farm into different lots, and each manage their own separate properties. This coffee comes from a lot called Jocotales, which is managed by Gabino. He’s planted Catuai, Bourbon and Caturra.
The climate in this area is a bit cooler and more prone to rain, so the coffee takes a lot longer to ferment after depulping. This results in bigger, fruitier flavours with a nice vibrant acidity.
