Roughly 98% of the coffee producers from this country are small-holders, with less than two hectares of land each. These small-holders combine their harvested cherries at the local wet mill for processing. Each community has a vast variance in growing conditions, soil types and heirloom varietals, resulting in unique and complex flavour profiles.
Celinga comes from a small micro-region within Sidamo called Yirgacheffe. Yirgacheffe is renowned for producing exemplary washed coffees with a classic flavour profile; clean, vibrant, bright, citrus, floral and mildly tea-like. The Celinga Mill ferments for 48 hours, refreshing the water supply every 12 hours from a local spring.

Just got my order in today... I highly recommend this coffee, the taste is amazing. I used a classic espresso cafetiere and it came out great. You really taste the hint of lemon... Been a while since I've tasted such quality espresso. Thanks for the good stuff guys!
