This is the first year we’ve bought coffee from Leonardo. Josh visited his farm in July of 2016 and was blown away by how much care he put into his work. His trees are planted along slopes with very rocky soil. It’s very hard to till, but allows for more oxygen to get into the soil and into the trees’ roots. He manages his processing very well, too. He de-pulps each harvest day at 3 p.m. and ferments his coffee overnight for 13 hours (this means he washes the coffee at 4 a.m. the next day!). While he washes, he skims off the floaters, which haven’t developed properly. After washing, he dries the parchment on his small patio for up to 3 weeks, depending on the weather. Before he sends his dried parchment to the mill in Ancuya, he goes through it by hand to remove any more visible defects. This is a rare practice, and his attention to detail shows in the cup, with clean and crisp flavours.
