Kochere is grown by 650 small holder farmers in the Yirgacheffe region of Ethiopia. Roughly 98% of the coffee producers from this country are small holders, farming on less than 2 hectares of land. These small-holders combine their harvested cherries to the local mill for processing. Each community has a vast variance in growing conditions, soil types and heirloom varietals, resulting in a unique and complex flavour profiles.
The Alemu Mill where the Kochere was processed is located very close to the village of Chelelektu. The coffee cherries are dried whole on raised beds, a method called natural or dried process. This process is best suited to arid regions for optimal drying conditions and may also be favoured in areas where water supply is limited. Natural processed coffee generally has a higher body, lower acidity and fruity flavours due to the seeds contact with the fruit of the cherry while drying.
