This coffee comes to us from a group of small holders near the town of Consaca in the Nariño Department of Colombia. Coffee farmers in Colombia typically have less than 2 hectares of land to grow coffee on, so many of them don’t produce enough to sell their coffee as strictly their own. Producers around the city bring their cherries to the local co-operative stations where they’re graded for physical quality before being sent to the central mill. Coffees that are of high quality are given an extra premium and are made available to specialty buyers to purchase. In this case, the blend showed incredible fruit sweetness and complexity and Josh thought it would be excellent as an espresso.
